Hello Again!!!

It has been some time since I have posted! I am so very sorry about that, but life got in the way :P

I have been cooking up a storm and have been busy busy! Dustin is playing Basketball, so I have been busy taking him to practice and going to watch his games!

And I have been busy with Austin's behavior clinician coming twice a week. Look at what they worked on last week :) They worked on problem solving and in the process made a flag from Austin's Legos :)  (please pay no mind to the dirty face...I swear his nickname should be Pig Pen from Charlie Brown..lol).

Then there's the crazy cat!! He nearly lost his life this past week! Because I nearly killed him..lol. We have had Midnight for almost 9 years, and he was a little over a year old when we got him, so he is between 10 and 11 years old. Last week, out of the blue, he started urinating on everything!! I was soo mad!!! We ended up taking him to the vet, and it turned out he has a urinary tract infection. So we had to change his diet quite a bit, because he also had a high ph level that indicates crystals in the urine. Crazy cat!





As you can see, he is a bit rotten and spoiled :P

I have been doing my homework like mad, trying to finish classes so that I can be student teaching next fall!! I am so excited!!!!! It's like there is finally light at the end of the homework tunnel! 

Ok, so that was a quick update on life and the crazy cat, so I am off to get my post in order for the yummy food part!!

HAPPY THANKSGIVING!

I know I haven't been keeping up with this blog, but I promise to update it very soon! I have been very busy with my school work and Austin's school work!

30 minute rolls :)

These rolls are soooo good! And they don't take long at all to make!

1 c plus 2 T warm water
1/3 c oil
2 T yeast
1/4 c sugar
1 1/2 tsp salt
1 egg
3 1/2 c bread flour (all purpose will work, too)

Heat oven to 400 degrees.

Combine water, oil, yeast and sugar in mixing bowl. Let rest for 15 minutes. Using the dough hook on your mixer, mix in the salt, egg and flour. Knead with hook until well incorporated and the dough is soft and smooth.

Form dough into 12 balls and place into greased 9x13 pan (or any pan, really) and allow to rest for 10 minutes.

Bake for 10 minutes at 400 degrees or until golden brown.

Ok, I realize that this recipe is technically 35 minute rolls :P but they are still amazingly easy! I just made these this morning for the dinner after my Grandfathers funeral service. R.I.P. Grandpa Jenkins, we love and miss you! <3

I am still alive..lol

Garlic Pull-Apart Bread

The other night we had spaghetti for dinner. Normally we have garlic bread with it. Well, since I have this Pinterest addiction, I decided to try something new to go with it. It was a huge hit!!! Austin kept coming back for more, and Russell ended up with a belly ache from eating so much..lol. Dustin, of course, didn't touch it. That kid is so picky I am surprised he is growing at all..lol.

For this recipe I started with a bundt type pan ( I don't have an actual bundt pan, so I used my Pampered Chef one that is a flatter version) and put a half stick of butter in it. Then I popped that into the oven and turned the oven to 350 degrees to pre-heat and melt the butter.

While that was melting, I put my garlic salt and Parmesan cheese into a small bowl and blended well.

 Then I took my tube of Grands Biscuits and cut them each into quarters
Then I took the pan out of the oven, and took each quarter and rolled it around in the garlic salt/cheese mixture to coat it well.
Then I just threw them randomly into the pan. And baked them.

Admit it, you are drooling, aren't you? This is so simple! And yummy goodness!!

1 tube Grands Biscuits (not flaky layer)
2 T garlic salt
1/2 c Parmesan cheese (the grated kind)
1/2 stick butter (I used unsalted since I was using garlic salt, but you can use whichever you like)

Place the 1/2 stick of butter into a bundt pan and place in the oven. Set the oven temp at 350 degrees.
While that is preheating/melting, cut your biscuits into quarters.
Place the garlic salt and parmesan cheese into a small bowl and blend well.
After the butter has melted, take pan out of the oven.
Take each quartered piece of biscuit and roll in the salt/cheese mixture until well coated.
Randomly throw them into the pan.
Bake at 350 degrees until golden brown on top.

Scrumptious Potatoes

These potatoes are awesome!! Russell says they taste like potato chips :) He ate 2 of them for dinner and another in his lunch for work the next day!
Potatoes- as many as needed for your meal
pepper
salt
olive oil- enough to lightly drizzle over potatoes

Preheat oven to 400 degrees. Wash and clean potatoes. Slice potatoes into thin slices, without actually slicing all of the way through. This is tedious, but well worth it!
Place in pan, and sprinkle liberally with pepper and salt (I used a pepper grinder and sea salt grinder, but regular salt and pepper work just fine, too!). Drizzle with olive oil.  Bake 30-40 minutes and viola!!! Yummy taters!!

Corn Fritters...Yumm-o!!!

Ok, I was skeptical at first! I mean seriously? Fried corn patties? Come on, who eats that?!? Well, apparently we do! These were super easy to make, and very yummy!!
Now, the recipe calls for freshly shucked corn. I didn't have that on hand. I had my frozen corn in the freezer, so I used that. It worked just fine :)

6 ears corn (about 4 1/2 cups)
4 eggs
1/2 c flour
1/2 tsp. salt
2 c vegetable oil for frying

Stir the corn, eggs, flour and salt together in a bowl, making a batter that is consistent with a thin pancake batter.
Heat oil to 325 degrees if using a larger pan, or electric skillet. Heat on med/high if using a regular skillet like I did.
Make 4 pancake sized fritters in a pan (as you can see, I didn't do that..lol).
Fry about 5 minutes on each side until golden brown. Drain on paper towel.
